Fried Fish & Tomato Sauce Recipe
YIELD: (4-5) SERVINGS
FRIED FISH INGREDIENTS
4-5 Fish Steaks
1 Lime
2-3 Garlic Cloves
2 Tsp Ginger
1 Bundle of Chive
2 Bundle of Chadon Beni
1 Sprig of Thyme
Salt and Black Pepper (to taste)
1 1/2 Cups Flour
2 Cups Oil
FRIED FISH METHOD
Wash, clean and drain fish.
Chop garlic, ginger, chive, chadon beni and thyme into fine pieces and set aside.
Place fish in a bowl and squeeze 1/2 lime onto fish.
Add chopped garlic, ginger, chive, chadon beni and thyme to fish.
Season with salt and black pepper.
Massage ingredients into fish. Let marinate 4-6 hours or overnight.
Pour flour into a separate dish.
Dredge fish in flour ensuring to coat the entire steak.
Once all fish is breaded in flour pour oil into cast iron skillet or your regular frying pan.
Heat oil to 350°F
Fry fish until golden brown on each side.
TOMATO SAUCE INGREDIENTS
6 Medium Tomatoes
2 Tbsp Oil
1 Medium Onion
5 Pimentos
1/2 Cup Diced Pumpkin
2 Garlic Cloves
1-2 Tbsp Brown Sugar
1/4 Cup Ketchup (Optional)
1/2-1 Cup Warm Water
Salt and Black Pepper (to taste)
TOMATO SAUCE METHOD
Dice tomatoes into small pieces and set aside.
Finely chop onion, pimento, pumpkin and garlic and set aside.
Heat saute pan over medium heat.
Add oil.
Add tomatoes, onion, pimentos, pumpkin and garlic.
Add 1 tbsp of brown sugar,
Mix well.
Bring to a boil then reduce to a simmer.
Add ketchup and 1/2 cup of water.
Mix well.
Let simmer for 10 minutes.
Taste. If you find it to be too acidic, add remaining sugar.
If by now you find the sauce is too thick add remaining water.
Once desired thickness is attained, remove from heat and season with salt and black pepper to taste.
