Trini Scorpion Wings Recipe
WINGS INGREDIENTS
4 Lbs Wings
2 Tsp Salt
1 Tsp Black Pepper
1/2 Tsp Garlic Powder
1/2 Tsp Onion Powder
1/2 Tsp Paprika
8 Cups Oil
2 Cups Flour
WINGS METHOD
Divide drumsticks and wings.
Clean, wash and pat wings dry.
In a bowl, season wings with salt, black pepper, garlic powder, onion powder and paprika.
Let marinate for 2-4 hours or overnight in the refrigerator.
Pour oil into frying pan and heat to 350°F / 175°C.
Dredge wings in flour remembering to knock off any loose flour.
Carefully place in hot oil and fry for 6-7 minutes or until golden brown.
SAUCE INGREDIENTS
1 Trinidad Scorpion Pepper
1 Tbsp Olive Oil
6 Chadon Beni Leaves (Culantro)
1 Cup Ketchup
1 Dash Worcestershire
1 Tbsp Molasses
1 Tbsp Soy Sauce
1/3 Cup Apple Juice
1/3 Cup Crushed Pineapple
1 Tbsp Brown Sugar
1 Tbsp White Sugar
1/2 Tsp Garlic Powder
1/2 Tsp Onion Powder
1 Tsp Black Pepper
1 Tsp Salt
SAUCE METHOD
Heat saute pan over low to medium heat.
Add olive oil.
Once oil is heated, add Chadon Beni and the Trinidad Scorpion Pepper.
Let cook for 2 minutes.
Add all remaining ingredients and mix well until full incorporated.
Taste for salt.
Pour sauce over wings and mix until all the wings are fully coated.
