Omelette Cupcakes Recipe



YIELD: 12 CUPCAKES

INGREDIENTS

Mrs. Dash - 2 Tbsp

Eggs - 9

Kale - 1 Cup

Onion - 1 Medium

Bell Pepper - 1 Large

Tomato - 3

Parmesan Cheese - 1/4 Cup

METHOD

  1. Preheat oven to 350°F

  2. Chop kale, onion, pepper, & tomato into small pieces.

  3. Crack eggs intro bowl and all vegetables and Mrs Dash and mix well.

  4. Spoon mixture into greased cupcake or muffin pan.

  5. Top with cheese.

  6. Bake for 20-25 minutes.
