Saffron Infused Couscous Recipe
INGREDIENTS
Mrs Dash - 2 Tbsp
Coconut Oil - 2 Tbsp
Chicken Breast - 1/2 Lb Diced
Garlic - 3 Cloves Minced
Mixed Vegetables - 1 Cup
Dried Cranberries - 1/4 Cup
Couscous - 2 Cups
Water - 2 Cups
Saffron - 1 Tsp
Parmesan Cheese - 1/4 Cup
METHOD
Heat oil to medium heat.
Add chicken and garlic and cook until tender.
Add Mrs Dash, vegetables and cranberries and cook for 2 minutes.
Set aside.
Pour water into bowl and bring to a boil.
Add couscous and saffron.
Once cooked, add chicken mixture to couscous and mix well.
Garnish with parmesan cheese.
