Oven-Baked Jerk Chicken Recipe
INGREDIENTS
Whole Chicken - 3 1/2 lb
Onion - 1 Medium
Chive - 1 Bundle
Scotch Bonnet Pepper - 2 (Seeds Optional)
Garlic - 6 Cloves
Pimento - 4
Thyme - 1 Sprig
All Spice Powder - 1 Tbsp
Nutmeg - 1 Tsp
Five Spice Powder - 1 Tbsp
Black Pepper - 1 Tbsp
Salt - 1/2 Tsp
Soy Sauce - 1/2 Cup
Vegetable Oil - 1 Tbsp
METHOD
Wash, clean and divide chicken into quarters. Set aside.
Using a food processor, combine all the dry ingredients followed by the soy sauce and vegetable oil. (Liquid may splatter)
Add mixture to chicken and massage well.
Cover and let marinate for 8 hours or overnight.
Preheat oven to 350°F.
Place chicken onto baking sheet and bake uncovered for 45 minutes.
