Trini Sweet Bread Recipe
YIELD - Two Loaves (9-10" by 3-4")
INGREDIENTS
Flour - 3 cups
Baking Powder - 1 tbsp
Coconut - 1 cup (Grated)
Butter - 1/2 cup
Brown Sugar - 1 cup
Raisins - 1/4 cup
Currants - 1/4 cup
Cherries - 1/3 cup
Mixed Fruit - 1/3 cup
Mixed Essence - 1 tsp
Cinnamon - 1/2 tsp
Nutmeg - 1/2 tsp
Water - 7 oz
METHOD
Add sugar, raisins, currants, cherries, mixed fruit, essence, cinnamon, nutmeg & water to a bowl.
Mix until sugar is dissolved.
Set aside.
Sift flour and baking powder into a regular bowl or mixing bowl.
Mix in grated coconut and butter.
Add the sugar mixture and quickly mix into the flour mixture. This should only take 2-3 minutes. (DO NOT OVER MIX)
Bake at 350°F for 50-60 minutes.
Once baked, brush on glaze and top with granulated sugar.
GLAZE INGREDIENTS
Sugar - 1/4 cup
Water - 1/2 cup
Mixed Essence - 1 tsp
Bay Leaf - 1
GLAZE METHOD
Add all ingredients to a small sauce pot.
Stir over medium heat until sugar is fully dissolved.
Bring to a boil and reduce by 1/3.
