How To Make Trini Egg Fried Rice
Yield: 10 – 12 Portions INGREDIENTS
1 ½ Tbsp Chief Brand Garlic Soy Sauce 1 ½ Tbsp Water 1 Tsp Sugar 4 Tbsp Vegetable Oil 5 Cloves Garlic, minced ½ Tsp Fresh Ginger, minced ¼ Cup Onions, minced ½ Cup Carrots, fine diced ½ Cup Frozen Green Peas 2 Eggs, whisked 2 Cups Boiled Rice, made the day before and refrigerated 2 Tsp Chief Brand Fried Rice Seasoning 1 Tbsp Sesame Oil ¼ Cup Scallions, finely chopped
METHOD
In a small bowl, mix together the soy sauce, water and sugar.
Place a large sauté pan or medium sized wok over high heat, drizzle in the vegetable oil and when heated add the garlic and cook, stirring until just starting to turn golden.
Add the onion and ginger and stir-fry for another 30 seconds or until the onion is just softened.
Place in the carrots and sauté for 1 minute followed by the green peas for 30 seconds.
Push all the ingredients over to one side of the pan or wok. Tilt the pan so that the oil slides onto the empty side. Pour the eggs into the oil and spread it out using a spatula into a thin sheet as that of an omelet and let cook.
Once eggs set up, mix all ingredients in the pot together and allow eggs to break into little chunks.
Add the rice and continue stir frying to incorporate all ingredients evenly. Drizzle in the soy sauce mixture and continue stir frying until well combined.
Season with Chief Brand Fried Rice Seasoning and sesame oil. Stir to mix and lastly sprinkle on the scallions.
Turn the heat off and toss through to evenly distribute.
Taste for seasonings and adjust with more salt if desired.
