How To Air Fry Baigan/Eggplant Chips
Yield: 2- 3 Portions
AIR-FRIED BAIGAN INGREDIENTS
1 Medium Eggplant (10 Oz)
2 Eggs
½ Tsp Oregano Flakes
¼ Tsp Paprika
¼ Tsp Garlic Powder
½ Tsp Black Pepper
1 Cup Cornstarch
1 Tsp Salt
2/3 Cup Breadcrumbs
3 Tbsp Parmesan Cheese
1 Tsp Parsley Flakes
METHOD
Wash and remove stem from eggplant. Pat dry and square off the sides of the eggplant by cutting a thin length of each side. This will ensure you have clean sides when you cut your fries.
Cut eggplant into ¼ inch long planks, then from each plank, cut fries into 3 inch long sticks.
Place fries in bowl to the side.
In another medium bowl, whisk the eggs, oregano flakes, paprika, garlic powder and black pepper together. Set aside.
Mix the cornstarch and salt together in another bowl and set aside also.
Pour the breadcrumbs, parmesan cheese and parsley flakes into another bowl and mix to evenly disperse.
Set up to bread the eggplant by, dipping the fries into the egg mixture, then into the cornstarch to coat evenly, then back into the egg mixture for another coating then finally into the breadcrumbs to create a well rounded crust.
Preheat Air Fryer to 350 Degrees Fahrenheit.
Transfer these fries into the air fryer’s basket and lay them down evenly without piling atop each one another. You may have to cook one set first then the remaining after depending on the size of your air fryer’s basket.
Cook in the air fryer for 25 minutes, stopping midway and turning the chips around to evenly brown then placing back to cook for the remaining time.

TOMATO DIPPING SAUCE INGREDIENTS
1¼ Cups Water
½ Cup Tomato Paste
1 Tbsp Sugar
1 Tsp Garlic Powder
1 Tsp Basil Flakes
½ Tsp Oregano Flakes
½ Tsp Paprika Powder
½ Tsp Pepper Flakes
Salt to taste
METHOD
Place a small saucepan over medium heat. Add the water, and all other ingredients. Bring to a simmer and cook for 5 – 6 minutes.
Taste, then season with salt or any additional spices or herbs you desire then remove from heat and serve with eggplant fries.
