One-Pot Firewood-Cooked Coconut Goat & Basmati Rice


Ingredients


For the Meat (Pre-season & Pre-cook):


2 lbs lamb or goat, bone-in (cut into chunks)

1 tbsp salt

1 tbsp black pepper

1 tbsp ground cumin

1 tbsp ground thyme

1 tbsp garam masala

1 tbsp smoked paprika

8 cloves garlic, minced

1-inch piece ginger, grated

2 tbsp lime or lemon juice

2 tbsp coconut oil (for browning)


For the Rice & Coconut Infusion:


2 cups basmati rice (rinsed)

14 oz Reàl Infused Exotics Cream of Coconut

3 cups water or stock

2 bay leaves

1 stick cinnamon

4-6 green cardamom pods (cracked slightly)

1 tsp ground turmeric

1 tsp ground nutmeg

2 tsp pepper sauce or to taste

1 1/2 cups onion (sliced thin)

1 tomato, chopped

1/4 cup chopped charon beni


Method


Step 1: Season & Pre-Cook the Meat


Marinate the goat with salt, black pepper, cumin, coriander, garam masala, paprika, garlic, ginger, and lime juice. Let it sit for at least 2 hours or overnight for deep flavor.

Brown the meat in a heavy-bottomed pot or Dutch oven over medium-high heat with a little oil. Get a deep golden sear, but don’t cook through. Set aside.

Step 2: Build the Base


In the same pot, add sliced onions and cook until soft and golden.

Add tomatoes, bay leaves, cinnamon stick, and cardamom. Sauté until fragrant (2-3 mins).

Stir in turmeric, nutmeg, and pepper sauce, letting the spices toast for a minute.

Step 3: Add Rice & Coconut Cream


Add the soaked & drained basmati rice, stirring to coat it with the spice mixture.

Pour in the cream of coconut and water/stock. Stir well.

Nestle the partially cooked goat into the rice mixture.

Sprinkle with fresh cilantro.

Step 4: Seal & Slow Cook Over Firewood


Cover the pot with a tight-fitting lid.

Place over low coals/firewood and cook gently until your goat is tender. Do not stir! Let the steam do the work.

Check occasionally to ensure there’s enough moisture (add a splash of warm water if needed).

Step 5: Serve & Enjoy


Remove from heat and let it rest for 15 minutes before opening the lid.

Gently fluff the rice and enjoy!
