Brunswick Sardine and Chickpea Salad Recipe

Ingredients

Brunswick Sardines in Olive Oil - 6 oz (drained)

Canned Chickpeas - 15 oz (rinsed and drained)

Cherry Tomatoes - 1/2 cup (halved)

Red Onion - 1/4 cup (finely chopped)

Cucumber - 1/4 cup (diced)

Fresh Parsley - 2 tbsp (chopped)

Lemon Juice - 1 tbsp

Olive Oil - 2 tbsp

Salt and pepper to taste


Method

1.⁠ ⁠In a large bowl, combine the drained canned sardines and chickpeas.

2.⁠ ⁠Add cherry tomatoes, red onion, cucumber, and chopped parsley to the bowl.

3.⁠ ⁠Squeeze the lemon juice over the mixture and drizzle with extra virgin olive oil.

4.⁠ ⁠Season with salt and pepper to taste.

5.⁠ ⁠Gently toss all the ingredients together until well combined.
