Chicken Foot Soup Recipe by Chef Jeremy Lovell 🇹🇹

Cook time – 1 hour
Marinating time - 2 hours.
Prep time - 30 mins
Ingredients:
Chicken foot - 3 lb (remove all nail tips)
Washing of chicken feet
Lime juice – 4 tbsp
Water – 6 cups
Seasoning ingredients:
Pimento peppers – 8 peppers (finely chopped)
Chive – 3 tbsp (finely chopped)
Fresh Thyme – 1 tbsp (finely chopped)
Garlic – 3 tbsp (peeled and finely chopped)
Chadon beni – 4 tbsp (finely chopped)
Bay leaf – 1 each
Salt to taste
Black pepper – 1 tbsp
Hot pepper – 1 whole pepper
Other Ingredients for Soup:
Onion – 3 tbsp (cut into large cubes)
Water -3 tbsp
Hot pepper – 1 each
Carrots – 4 oz (cut into large cubes)
Potatoes – 4 oz (cut into large cubes)
Pumpkin – 4 oz (cut into large cubes)
Thyme fresh – 2 oz (finely chopped)
Pimento peppers – 3 tbsp (roughly chopped)
Garlic – 4 cloves (peeled)
Butter – 4 oz
Split peas cooked soft – 2 Cups
Dumpling Dough:
Flour – 2 cups
Water – 1 cup
Method:
Washing of Chicken feet
In a large bowl add chicken feet (nail tips off) water and lime juice.
Stir for 3 minutes and allow to soak for a further 5 minutes.
After soaking rinse beef under running water for 3 minutes.
Making dumplings:
Add water and flour to a large bowl.
Mix together and knead until the dough comes together.
Roll the dough out and cut it into 2-inch pieces.
Seasoning of chicken feet:
In a large bowl add washed chicken feet and all seasoning ingredients.
Mix thoroughly for 3 minutes.
Allow to marinate for at least 2 hours.
Cooking of chicken foot soup:
Place the Tall pot on the stove, and turn on the heat.
Add butter and seasoned chicken feet and stir let cook for 5mins.
Add water just enough to cover the chicken feet and cook for a further 15mins.
After 15mins check for tenderness of chicken feet. If chicken feet are soft, add all other ingredients except dumplings. Add more water just to cover the ingredients, cover and allow to cook for another 30min.
After 30 mins check for tenderness of provisions, and vegetables and add dumplings.
Taste for salt content to your desired taste.
Add water if needed, and let cook for 15mins.
Once the dumplings are cooked turn off heat.
Note: Do not allow the hot pepper to burst. This may add unwanted spice to the dish.
