Coconut Curry Boneless Chicken Recipe by Chef Shaun 🇹🇹 Foodie Nation



Yield – 4 to 6 Servings


Ingredients

Boneless Chicken Thighs – 2 lbs

Salt – 1 tsp

Black Pepper – ¼ tsp

Curry Powder – 1 tbsp + 1 ½ tbsp

Green Seasoning – 2 tbsp

Mustard Oil – 2 tbsp

Fenugreek (Methi) Seeds – 1 tbsp

Cumin (Geera) Seeds – 1 tsp

Diced Onion – 1 ½ cups

Diced Pimento – ¼ cup

Minced Ginger – 1 tbsp

Minced Garlic – 2 tbsp

Coconut Milk – 2 cups

Chopped Chadon Beni – ½ cup

Sliced Tomato – 1 cup


Method

1. Wash and clean your thughs before cutting them into 1-inch pieces.

2. Season with salt, black pepper, 1 tbsp curry & green seasoning.

3. Set aside.

4. Heat your medium sized pot over high heat.

5. Add your oil.

6. Add your fenugreek, cumin, onion, pimento and ginger.

7. Allow to cook for 2 minutes.

8. Add your garlic & remaining curry powder mixed with water.

9. Allow to cook for 2 minutes.

10. Add your thighs, cover and allow to cook for 5 minutes.

11. Stir in coconut milk, cover and allow to cook for 5 minutes.

12. Taste for salt.

13. Remove from heat.

14. Add remaining ingredients.

15. Enjoy!
