Doritos Fried Chicken Wrap

Tortilla Wraps
Yield - 20 (30g) mini tortilla shells
Ingredients:
AP Flour - 2 1/2 cups
Sea Salt - 1 tsp
Baking Powder - 3/4 tsp
Warm Water - 1 cup
Unsalted Butter - 4 tbsp (room temp)
Method
1. in a bowl, combine flour, salt and baking powder.
2. Set aside.
3. Combine water and butter.
4. Add your water mixture to the flour.
5. Knead until a soft ball is formed (about 5 minutes).
6. Cover and let rest for 20 minutes.
7. Divide into 20 balls (for best results, use a scale to weigh each tortilla).
8. Cover and let rest for 15 minutes or up to 2 hours.
9. Heat a large skillet or Tawa.
10. Roll each ball out to 6 inches.
11. Cook for 45 seconds to 1 minute on either side.
12. When freezing, separate with parchment paper and store in a sealed ziplock bag.
Fried Chicken Breast Strips
Chicken Breast - 2 lbs (washed and cut into 1/2 inch strips)
Salt - 1 1/2 tbsp
Black Pepper - 2 tsp
Garlic Powder - 1/2 tbsp
Onion Powder - 1/2 tbsp
Paprika - 1/2 tbsp
Fermented Pimento Sauce - 2 tbsp
Fermented Pepper Sauce - 1 tbsp
Milk - 2 cups
Eggs - 2 large (beaten)
Vinegar - 1/8 cup
AP Flour 1 cup
Crushed Doritos 1 1/2 cups
Coconut Oil to fry - 4 cups
Method
1. Season chicken with salt, black pepper, garlic, onion, paprika, pimento sauce and pepper sauce.
2. Add milk, eggs & vinegar.
3. Let marinate for 30 minutes.
4. Combine flour and crushed Doritos.
5. Heat oil over medium to high heat.
6. Coat each chicken strip in the flour and Dorito mixture, ensuring to shake off the excess.
7. Once your oil has reached 325F, fry your chicken strips until golden brown in colour.
Garlic Aioli
Water - 1/4 cup
Garlic Cloves - 25
Chadon Beni - 12 leaves
Granulated Sugar- 1/4 cup
Mayonnaise - 2 1/2 cups
Method
1. Add all your ingredients to your blend and blend to a smooth consistency.
