Ingredients
Jasmine Rice- 2 cups.
Lap Chong/Cheong- 8 oz (sliced)
Eggs- 2 large (beaten)
Sesame Oil- ¼ cup
Onion- 1/3 cup.
Garlic- ¼ cup
Ginger- 1/8 cup.
Carrots- 1 cup (diced)
Xaoxing- ¼ cup
White Chive- ½ cup + ¼ cup
Soy Sauce- ¼ cup
Fried Rice Seasoning- 1 tbsp
Salt- 2 tsp
White Pepper- ½ tsp
Method
1. Boil rice the day before for best results.
2. Rehydrate your lap chong as illustrated in the video.
3. Slice on the bias and set aside.
4. Scramble your eggs and season with salt.
5. Set aside.
