How To Make Tomato Choka
Kez looks on with excitement as Chef Jeremy demonstrates how he prepares his spin of Tomato Choka:
Yield - Serves 3 persons

Prep time – 15 minutes
Ingredients
Tomato - 1lb
Onion – 2 tbsp
Pimento Pepper – 4 peppers
Garlic – 3 cloves (Crushed)
Mustard Oil – 2 tbsp (substitute vegetable oil)
Chadon Beni - 2 tbsp (finely chopped)
Salt to taste
Black Pepper - 1 tsp
Brown Sugar - 1 tbsp
Curry Powder - 1 tsp
Mustard – 1 tsp
Hot Pepper – 1
Method
Over an open flame, roast whole tomatoes, onion and pimentos until outsides are charred. Cut into half inch pieces and set aside.
Place sauté pan on stove and allow to heat up
When sauté pan is hot, add mustard oil, garlic and curry powder.
Stir for 5 minutes then add tomatoes, onion and pimentos.
Add black pepper, mustard, sugar, chadon beni and salt to taste and stir for 5 minutes.
Allow to cook for 15 minutes.
Take off heat.
Note: This dish is typically served with Sada roti or coconut bake.
