Mediterranean-Inspired Salad with Avocado Dressing Recipe by Chef Shaun 🇹🇹
Yield - 8 to 10 Servings.
Ingredients:
Iceberg/Romain Lettuce - 2 heads (cubed)
Red Onion - 1 cup (thinly sliced)
Red Apples - 2 (cubed)
Pecans/Walnuts - 1 cup
Feta Cheese - 1 cup
Dressing:
Lemon Juice - 1 cup
Honey - 1 cup
Olive Oil - 2 tbsp
Ripe Avocado - 1 cup
Sea Salt - Pinch
Method:
Add all dressing ingredients to your blender or food processor and process until the mixture resembles a smooth consistency.
Taste for salt and set aside.
Add lettuce to a bowl.
Add remaining ingredients.
Drizzle dressing over salad before tossing.
