Nourishing Fish Broth Recipe by Chef Shaun 🇹🇹 Foodie Nation



Green Seasoning Recipe:

Garlic Cloves – 10

Pimento Peppers – 8 to 10

Hot Pepper – 1

Fine Thyme – 10 Sprigs

Chadon Beni – 1 ½ cups

Chive – ¾ cup

Ginger – 1 inch piece


Yield – 4 to 6 Servings


Ingredients

Carrite Fish Steaks – 2 lbs

Lime Juice – ¼ cup

Salt – 1 tsp + more

Black Pepper – ¼ tsp

Green Seasoning – 1/3 cup (Recipe Below)

Potato – ½ lb (cubed)

Carrots – ½ lb (rounds)

Ochro – 6 to 8 (whole)

Green Bananas – 1 lb (peeled whole)

Pumpkin – ½ lb (cubed)

Whole Garlic Cloves – 5 (crushed)

Onion – 1 cup (cubed)

Pimento Peppers – (chunks)

Chadon Beni – ½ cup (chopped)

Chive – 1/3 cup (chopped)

Hot Pepper – 1 (whole)


Method

1. Clean fish with lime juice submerged in water.

2. Drain off excess liquid.

3. Season with salt, black pepper & green seasoning.

4. Set aside.

5. Add potato, carrot, ochro, green banana, pumpkin, garlic, onion, pimento, chadon beni, chive & hot pepper to pot.

6. Cover with water.

7. Season with salt.

8. Partly cover and allow to cook over medium heat for 25 minutes.

9. Add fish, salt, lime juice, pepper sauce.

10. Gently stir, partly cover and allow to cook until fish is fully cooked (about 20 minutes).

11. Taste for salt, lime juice and heat.

12. Adjust accordingly and enjoy!
