Pineapple Chow Recipe by Chef Jeremy Lovell
INGREDIENTS
1 pineapple, cut in wedges or large cubes
1 tsp pimento pepper, chopped
2 tsp parsley, chopped
2 tbsp fresh lime juice
salt and black pepper, to taste
3 tsp chadon beni/culantro, chopped
2 tsp garlic, grated
1 whole pepper, cut in half (habanero/scotch bonnet)
1 tsp roasted geera (cumin) powder (optional)
METHOD
In a medium metal bowl add all ingredients and mix thoroughly. Season with salt and black pepper to taste. Allow to marinate for 60min then enjoy!
