Potato Chips Recipe by Chef Jeremy Lovell
Yield - Serves 6 Persons
Cook time: 15 minutes
Prep time -30 minutes
Marinating time – Approx. 2 hours
Ingredients:
Large Potato – 1 lb.
Lime Juice – 3 tbsp
White Vinegar – 2 tbsp
Salt – 2 tbsp
Fresh Parsley – 1 tbsp (finely chopped)
Oil for Deep Frying – Approx. 6 cups
Method:
Wash potatoes (You can choose to leave the skin on or not).
Using a mandolin or sharp knife, slice the potatoes as thinly as possible and place in large bowl.
Add vinegar, salt and water to potatoes (just enough to cover).
Place in refrigerator and allow potatoes to marinate for at least 2 hours.
Frying of potato:
Right before marinating time is up, place a large frying pan onto stove.
Turn heat on high and allow to heat up.
After potato has marinated remove from water and squeeze dry.
Add some of the potatoes to oil as illustrated in the video.
Fry until golden brown. Take out and place in metal bowl, sprinkle with chopped parsley and extra salt if needed.
