Soft & Buttery Dinner Rolls Recipe by Chef Shaun 🇹🇹 Foodie Nation
Yield - 15 Rolls
Ingredients
Hot water - 150 grams
Full Milk - 170 grams
Instant Yeast - 20 grams
AP Flour - 540 grams
White Sugar - 55 grams
Salt - 5 grams
Baking Powder - 10 grams
Unsalted Butter - 70 grams + more
Sea Salt - Sprinkle On Top
Method
Mix water, milk & yeast.
Cover and allow yeast to bloom for 15 minutes.
Pour liquid mixture into your stand mixer or bowl.
Add flour, sugar & baking powder.
Knead on low speed for 5 minutes, then on medium speed for 5 minutes.
Cover with a warm damp cloth and allow to rest 20 minutes.
With your stand mixer on low speed, add your room temperature butter in 4 parts. This should take 3 minutes.
Once all your butter is incorporated, increase the speed to medium speed to finish kneading (about 2 minutes).
Transfer to a lightly greased bowl, cover and allow to rest u til doubled in size.
Punch the excess air out and divide your dough into fifteen 2oz pieces.
Shape into smooth balls.
Place on your greased baking sheet.
Dimple with a wet toothpick.
Let rise 1 hour or until your rolls have more than doubled in size (as illustrated in the video).
Bake at 350F for 15 minutes, rotating halfway through.
Brush with melted butter & sprinkle salt.
