Trini BBQ Sauce Recipe by Chef Jeremy Lovell
Yield - 6 Cups.
Prep Time – 45 minutes.
Ingredients:
Chadon Beni – 3 tbsp (finely chopped)
Pimento Peppers – 3 tbsp (finely chopped)
Salt to taste
Sugar – 2tbsp
Black Pepper -1 tbsp
Garlic – 1 cup (finely chopped)
Red Onion – 1 cup (thinly sliced)
Chive– 3 tbsp (finely chopped)
Water – Approx. 1 cup
White Vinegar – 1 tbsp
BBQ Sauce – 4 cups
Coca Cola – 20oz
Bay Leaf – 2 each
Mustard – 4 tbsp
Cinnamon Stick – 1
Star Anise – 2
Clove Powder – 1 tsp
Method:
Place sauce pot on stove over low heat.
Add all ingredients.
Stir until fully incorporated
Allow to simmer for 45 minutes, ensuring to stir occasionally.
