Trini Curry Stew Chicken Recipe by Chef Jeremy Lovell
Yield - Serves 6 Persons
Cook time – Approx. 45 minutes
Marinating time – At least 4 hrs.
Prep time – 30 minutes
Ingredients:
Chicken – 3lb (Cut into 2-inch pieces)
Washing of Chicken:
Lime Juice – 4 tbsp
Water – 6 cups
Seasoning Ingredients:
Pimento Pepper – 3 tbsp (finely chopped)
Garlic – 3 tbsp (finely chopped)
Fine Thyme – 2 tbsp (finely chopped)
White Onion – ½ cup (finely chopped)
Chive – 3 tbsp (finely chopped)
Chadon Beni – 3tbsp (finely chopped)
Celery – 2 tbsp (finely chopped)
Curry Powder – 3 tbsp
Clove Powder – 1 tsp
Bay Leaf – 1
Whole Hot Pepper – 1
Salt to taste.
Black pepper – 1 tbsp
For Browning:
Brown Sugar – 4 oz
Vegetable Oil – 4 oz
Method
Washing of Chicken:
In a large bowl add chicken, water and lime juice.
Stir for 3 minutes and allow to soak for a further 5 minutes.
Rinse chicken under running water for 3minutes.
Allow excess water to drain off.
Seasoning of chicken:
Place chicken into a large bowl
Add pimento, garlic, thyme, onion, chive, shadow beni, celery, curry powder, clove and bay leaf.
Mix thoroughly for 2 minutes, cover and allow to marinate for at least 4 hours.
Cooking of Chicken:
Using a heavy iron pot or skillet place on stove and turn heat on high.
When pot is hot, add brown sugar and oil.
Allow sugar to caramelize.
When sugar starts to turn from brown to dark brown (as illustrated in the video) add seasoned chicken stir for 2 minutes and cover. (Do not allow sugar to burn.)
Allow chicken to spring its own natural liquid.
Reduce heat to medium to low and let chicken cook for 30 minutes
After 30 minutes of cooking, uncover and check liquid level. Add hot water little at a time only if needed.
If chicken is not cooked, cover and allow to cook until it reaches your desired doneness (about 10 to 15 minutes. Chicken should be falling off bone when it is cooked).
