Trini Garlic Sauce Recipe by Chef Jeremy Lovell

Ingredients:
Chadon Beni – 3 tbsp (finely chopped)
Pimento Peppers – 3 tbsp (finely chopped)
Salt to taste
Sugar – 2 tbsp
Fresh Lime Juice – 1 tbsp
Black Pepper -1 tbsp
Garlic – 1 cup (finely chopped)
Red Onion – 1 cup (thinly sliced)
Chive – 3 tbsp (finely chopped)
Water – Approx. 2 cups
Mayonnaise – 3 cups
White Vinegar – 1 tbsp
Method:
In large blender, add all ingredients.
Blend until mixture is smooth.
Remove from blender and put into bowl or bottle, cover and place in the refrigerator.
