Trini Pepper Shrimp Recipe by Chef Jeremy Lovell
Yield: 6 Servings.
Cook Time: Approx. 45 minutes
Seasoning of Shrimp – 30 minutes
Marinating Time – 1 hour
Ingredients:
Shrimp – (shell removed and deveined) - 3lbs
Washing of Shrimp:
Lime Juice – 4tbsp
Water – 6 cups
Seasoning Mix:
Pimento Peppers - 3 tbsp (finely chopped)
Garlic - 3 tbsp (finely chopped)
Onion - 3 tbsp (finely chopped)
Whole Hot Pepper – 1
Sesame Oil - 2 tbsp
All Spice - 3 tbsp
Chive - 3 tbsp
Black Pepper - 1 tbsp
Salt – to taste
Ingredients to Sauté:
Sesame Oil - 3 tbsp
Garlic Cloves – 4
Onion - 3 tbsp (finely chopped)
Pimento Peppers -3 tbsp (finely chopped)
Red Bell Pepper – ¼ cup (large diced)
Ginger - 1 tbsp (finely chopped)
Ketchup - 1 cup
Chive – 3 tbsp – (finely chopped)
Soy Sauce – 2 tbsp
Lime Juice – 2 tbsp
Chadon Beni – 3 tbsp (finely chopped)
Method:
Washing of Shrimp:
Using a large bowl, add shrimp, lime juice and water. Let soak for 15mins then rinse thoroughly under running water.
Strain out all water.
Seasoning of Shrimp:
Add all ingredients listed in the seasoning mix to washed shrimp and mix for 5mins.
Cover and allow shrimp to marinate for at least 1 hour.
Sauté:
Using a medium sized bowl, add all ingredients for sauté except oil and mix.
Place heavy metal pot or skillet on stove
Add oil and allow to heat up.
When pot and oil is very hot add sauté ingredients and stir, allowing it to cook for 5mins.
Cooking of Shrimp:
Add seasoned shrimp to sautéed ingredients, stir thoroughly and cover.
Let shrimp cook for 2 minutes on either side then check for liquid levels (allow shrimp to spring its own liquid before adding water. If water is needed add ½ cup at a time.)
Check for doneness of shrimp and enjoy.
