Our friend Alex Kaufmann @bahayogi returns to learn a new way to prepare and enjoy Aloo Pies, filled with cheese!


Yield - 8 Pies


Ingredients

Coconut Oil - 1/2 cup

Fenugreek (Methi) Seeds - 1 tbsp

Onion - 1 cup (thinly sliced)

Garlic Cloves - 6 to 8 (crushed)

Potato - 2 lbs (peeled, quartered & thinly sliced)

Fermented Pepper Sauce - 2 tsp or to taste


Dough

AP Flour - 3 cups

Brown Sugar - 1 1/2 tbsp

Instant Yeast - 2 tsp

Salt - 1 tbsp

Baking Powder - 1 tbsp

Unsalted Butter - 1 oz

Lukewarm Water - 8 fl oz


Method

Heat a large saute pan over medium to high heat.

Once heated, add coconut oil.

Once your oil is heated, add your fenugreek and onion.

Allow your onion to cook until translucent (about 2 minutes).

Add your garlic and allow to cook.

As the garlic begins to turn brown, add your potato & pepper sauce.

Stir to combine.

Cover and allow your potato to cook & turn brown in color.

Stir every 5 minutes.

Once your potato is fully cooked, taste for salt.

Remove from the pot and set aside.

For your dough, combine all your dry ingredients.

Add your butter, ensuring to break up into small even pieces.

Make a well in the middle and add your water.

Knead to a smooth ball of dough (about 5 minutes).

Cover and allow to rest for 20 minutes.

Divide into 8 evenly sized balls.

Open them up into a 3 to 4 inch sized disc.

Fill with alloo and seal as illustrated.

Fry in vegetable oil set at 350F until golden brown.

Allow excess oil to drain off.

Enjoy!
