Vegan Spiced Nutty Rice (Mixed Nuts Biryani) Recipe by Chef Shaun 🇹🇹 Foodie Nation



Yield – 10 to 12 Servings.


Ingredients

Coconut Oil – 4 oz

Cardamon Pods – 10

Cinnamon Stick – 1

Caripulee Leaves – 5

Star Anise - 2

Whole Geera (Cumin) – 1 tbsp

Garam Masala – 1 tsp

Turmeric Powder –2 tsp

Minced Onion – 1 cup

Crushed Garlic – ¼ cup

Grated Carrots – 1 cup

Oyster Mushrooms – ½ cup (chopped)

Golden Raisins – ½ cup

Mixed Nuts – 1 cup (chopped)

Fermented Pimento Sauce – ¼ cup

Salt – 1 ½ tbsp

Black Pepper – ½ tsp

Basmati Rice – 1 lb (washed)


Method

1. Heat large pot over medium heat.

2. Once heated, add oil.

3. Once oil is heated, add cardamon, cinnamon, caripulee, geera, masala, turmeric, onion, garlic, pimento, carrots, mushrooms, raisins, nuts, salt & black pepper.

4. Allow mixture to cook for 3 to 4 minutes.

5. Add rice, stirring to evenly coat with mixture.

6. Cover with how water.

7. Bring to a boil before reducing to a simmer.

8. Cover and allow to cook until rice is tender.
