Vegan Stewed Soya Chunks Recipe by Chef Shaun 🇹🇹 Foodie Nation



Yield – 6 to 8 Servings


Ingredients

Soya Chunks – 227g

Salt – 1 tsp

Black Pepper – ¼ tsp

Green Seasoning – 2 tbsp

Aromatic Bitters – 1 tsp

Worcestershire Sauce – 1 tbsp

Diced Onion – ¾ cup

Diced Pimento – ¼ cup

Minced Garlic – 1 tbsp

Minced Ginger – 1 tsp

Brown Sugar – ¼ cup

Sliced Tomato – 1 cup

Chopped Chadon Beni – ¼ cup

Chopped Chive – ¼ cup


Method

1. Soak your soya in hot water for 15 minutes.

2. Drain off excess liquid.

3. Season with salt, black pepper, green seasoning, bitters, worcestershire sauce, onion, pimento, garlic & ginger.

4. Set aside.

5. Heat your medium sized pot over high heat.

6. Add sugar.

7. Once caramelized, add your soya.

8. Cover and allow to brown for 5 minutes.

9. Stir your soya, cover and allow the other side to brown for 5 minutes.

10. Add water, reduce heat to medium, cover and allow to cook for 5 minutes.

11. Taste and adjust for salt.

12. Remove from heat and add your remaining ingredients.

13. Enjoy!
